Fan-Favorite Fig Bars

These fig bars were an instant hit from the very first batch I made in November 2025. Chewy, naturally sweetened, and deeply satisfying, these bars have earned their place as a repeat-request staple.

- Prep the Oven and Pan. Preheat your oven to 375°F. Use an 8-inch silicone baking dish, or line a standard 8-inch baking pan with parchment paper for easy removal.
- Mix the Dry Crust Ingredients. In a medium mixing bowl, whisk together the oat flour, rolled oats, baking powder, and salt. (If you don’t have oat flour, you can make your own by pulsing rolled oats in a blender or food processor until fine.)
- Combine the Crust. Add the tahini, aquafaba, and date sweetener to the bowl and mix well. Let the mixture sit for a few minutes while you prepare the filling; this allows the oats to hydrate, which helps the crust bind together perfectly.
- Prepare the Fig Filling. Add all filling ingredients into a food processor and blend until they form a thick, coarse paste.
- Layer the Bars. Give the crust mixture one final stir. Press half of the dough into the bottom of your prepared pan. The mixture is heavy and dense, so it requires a little handling to spread it out into an even layer.

- Add Filling and Top Layer. Spread the fig mixture evenly over the bottom crust. Smooth the remaining crust mixture over the top, spreading it to the edges to cover the filling.

- Bake and Cool. Bake the bars for about 30 minutes, or until they are lightly browned. Let cool on baking rack for an hour or longer before cutting into squares, unless you just can't wait!
